Healthy Taco Soup

This is a great spin on taco soup, it is packed with vegetables and is super yummy!

Ingredients
  

  • 1 lb ground turkey or chicken
  • 1 medium yellow onion diced
  • 6 mini sweet peppers sliced
  • 3 tablespoons homemade Mexican seasoning Link in Notes
  • 15 ounce can black beans rinsed and drained
  • 15 ounce can kidney or red beans rinsed and drained
  • 15 ounce can corn drained
  • 15 ounce can petite diced tomatoes
  • 2 fresh jalapeños diced
  • 1 1/2 cups homemade chicken broth Link in notes
  • 1 tablespoon olive oil
  • 1 bunch of cilantro chopped
  • the juice of one lime

Instructions
 

  • In a large stockpot, over medium-high heat, add the olive oil, onion, mini peppers and jalapeños. Sauté to soften the vegetables.
  • Add the meat and brown, stirring frequently.
  • Drain off any excess fat.
  • Season with the Mexican Spice, and add in the remaining ingredients.
  • Stir together, cover the soup with the lid, and simmer for 20 minutes, stirring occasionally.
  • Add in the lime juice and cilantro, mix to combine.
