Healthy Taco Soup
This is a great spin on taco soup, it is packed with vegetables and is super yummy!
Ingredients
- 1 lb ground turkey or chicken
- 1 medium yellow onion diced
- 6 mini sweet peppers sliced
- 3 tablespoons homemade Mexican seasoning Link in Notes
- 15 ounce can black beans rinsed and drained
- 15 ounce can kidney or red beans rinsed and drained
- 15 ounce can corn drained
- 15 ounce can petite diced tomatoes
- 2 fresh jalapeños diced
- 1 1/2 cups homemade chicken broth Link in notes
- 1 tablespoon olive oil
- 1 bunch of cilantro chopped
- the juice of one lime
Instructions
- In a large stockpot, over medium-high heat, add the olive oil, onion, mini peppers and jalapeños. Sauté to soften the vegetables.
- Add the meat and brown, stirring frequently.
- Drain off any excess fat.
- Season with the Mexican Spice, and add in the remaining ingredients.
- Stir together, cover the soup with the lid, and simmer for 20 minutes, stirring occasionally.
- Add in the lime juice and cilantro, mix to combine.
