Healthy Taco Soup

This is a great spin on taco soup, it is packed with vegetables and is super yummy!

Ingredients
  

  • 1 lb ground turkey or chicken
  • 1 medium yellow onion diced
  • 6 mini sweet peppers sliced
  • 3 tablespoons homemade Mexican seasoning Link in Notes
  • 15 ounce can black beans rinsed and drained
  • 15 ounce can kidney or red beans rinsed and drained
  • 15 ounce can corn drained
  • 15 ounce can petite diced tomatoes
  • 2 fresh jalapeños diced
  • 1 1/2 cups homemade chicken broth Link in notes
  • 1 tablespoon olive oil
  • 1 bunch of cilantro chopped
  • the juice of one lime

Method
 

  1. In a large stockpot, over medium-high heat, add the olive oil, onion, mini peppers and jalapeños. Sauté to soften the vegetables.
  2. Add the meat and brown, stirring frequently.
  3. Drain off any excess fat.
  4. Season with the Mexican Spice, and add in the remaining ingredients.
  5. Stir together, cover the soup with the lid, and simmer for 20 minutes, stirring occasionally.
  6. Add in the lime juice and cilantro, mix to combine.
