Baked Salmon with Peach Bourbon Chutney
Ingredients
- 2 6 ounce salmon fillets skin removed
- coarse salt and pepper to taste
- 4 peaches peeled and cubed
- 2 tablespoons honey
- 1/4 cup bourbon whisky I used Jack Daniels
- 1/4 teaspoon home made garlic salt
- 1/8 teaspoon chili powder
Instructions
- Prepare a baking dish, and place the salmon in the baking dish. Salt and pepper both sides of the salmon, and set aside.
- Preheat your oven on the broiler setting.
- Wash, peel and cube the peaches. Place them in a small skillet.
- Add the bourbon, honey, garlic salt and chili powder. You can use more chili to spice this up.
- Heat the bourbon mixture over medium heat, until the peaches are soft and the bourbon is absorbed into the peaches.
- Top the salmon with the bourbon peach mixture.
- Place the baking dish in the oven and broil for about 10 minutes, or more depending on the thickness of your salmon. Be sure to watch the bourbon peach mixture, you do not want it to burn.
