Healthy Chicken and Pasta Bake
Ingredients
- 4 skinless chicken breasts sliced very thin
- 6 oz orzo pasta
- 10 cherry tomatoes halved
- 1/2 teaspoon homemade garlic salt See below for recipe link
- 1/2 teaspoon Sicilian Spice See below for recipe link
- 1/4 teaspoon gops See below for recipe link
- 2 big handfuls of fresh chopped spinach
- 1 cup part-skim mozzarella cheese shredded
Instructions
- Preheat oven to 350 degrees F.
- Cook and drain pasta according to the directions but subtract 2 minutes from the cook time.
- In a small bowl, mix all the spices together and set aside.
- While the pasta is cooking, in a casserole dish, place the chicken at the bottom, season with some of the spice mixture.
- Top the chicken with the sliced tomatoes.
- Drain the pasta from the water, and place it back into the pan you cooked it in.
- Add the spinach to the pasta and stir until the spinach wilts a little.
- Season the spinach and pasta with the rest of the spices, and add the mozzarella.
- Mix well and pour this on top of the chicken.
- Bake for 20 -30 minutes or until the cheese is melted and the chicken is cooked through.
- *Cooking time will depend on how thin your pieces of chicken are.
Notes
This should be about 6 points on the purple points list for weight watchers.
