Healthy Chicken and Pasta Bake

Ingredients
  

  • 4 skinless chicken breasts sliced very thin
  • 6 oz orzo pasta
  • 10 cherry tomatoes halved
  • 1/2 teaspoon homemade garlic salt See below for recipe link
  • 1/2 teaspoon Sicilian Spice See below for recipe link
  • 1/4 teaspoon gops See below for recipe link
  • 2 big handfuls of fresh chopped spinach
  • 1 cup part-skim mozzarella cheese shredded

Instructions
 

  • Preheat oven to 350 degrees F.
  • Cook and drain pasta according to the directions but subtract 2 minutes from the cook time.
  • In a small bowl, mix all the spices together and set aside.
  • While the pasta is cooking, in a casserole dish, place the chicken at the bottom, season with some of the spice mixture.
  • Top the chicken with the sliced tomatoes.
  • Drain the pasta from the water, and place it back into the pan you cooked it in.
  • Add the spinach to the pasta and stir until the spinach wilts a little.
  • Season the spinach and pasta with the rest of the spices, and add the mozzarella.
  • Mix well and pour this on top of the chicken.
  • Bake for 20 -30 minutes or until the cheese is melted and the chicken is cooked through.
  • *Cooking time will depend on how thin your pieces of chicken are.

Notes

This should be about 6 points on the purple points list for weight watchers.
