This is a very easy, no fuss dish. I was invited to dinner at my friends house, and I told them I would love to cook in their kitchen. (it is to die for) So, we decided on Mexican. So I made this carne asada, Guacamole, and Chili Lime Shrimp. Only I put the shrimp on the barbie!
We had Shrimp tacos with cubed pineapple, Guacamole with the tortilla chips and the tacos di Carne Asada!
Carne Asada
Ingredients
- 1 jalapeño seeded and minced
- 4 cloves garlic minced
- 1/2 cup chopped cilantro
- 1/3 cup olive oil
- juice of 1 orange
- juice of 1 lime
- 2 tablespoons white wine vinegar
- 2 teaspoons chili powder
- 1 teaspoon coarse salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon ancho chili powder
- 1/4 teaspoon freshly ground black pepper
- 2 pounds flank steak or skirt steak
Instructions
- Place the steak in a baking dish or large zip bag, set aside.
- Place the rest of the ingredients into a mixing bowl and mix well.
- Pour the marinade on top of the steak and turn the steak a few times to completely coat it with the marinade.
- Place in the fridge and refrigerate for 2 to 4 hours.
- Preheat a grill for at medium-high heat (400-450°F).
- Remove steak from marinade.
- Grill steaks with the lid closed for 4-8 minutes per side, depending on the thickness.
- Remove steaks from the grill and allow to rest for 5 minutes.
- Slice thinly against the grain and serve with your favorite condiments.
