This is a very easy, no fuss dish. I was invited to dinner at my friends house, and I told them I would love to cook in their kitchen. (it is to die for) So, we decided on Mexican. So I made this carne asada, Guacamole, and Chili Lime Shrimp. Only I put the shrimp on the barbie!

We had Shrimp tacos with cubed pineapple, Guacamole with the tortilla chips and the tacos di Carne Asada!

Carne Asada

Ingredients
  

  • 1 jalapeño seeded and minced
  • 4 cloves garlic minced
  • 1/2 cup chopped cilantro
  • 1/3 cup olive oil
  • juice of 1 orange
  • juice of 1 lime
  • 2 tablespoons white wine vinegar
  • 2 teaspoons chili powder
  • 1 teaspoon coarse salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon ancho chili powder
  • 1/4 teaspoon freshly ground black pepper
  • 2 pounds flank steak or skirt steak

Method
 

  1. Place the steak in a baking dish or large zip bag, set aside.
  2. Place the rest of the ingredients into a mixing bowl and mix well.
  3. Pour the marinade on top of the steak and turn the steak a few times to completely coat it with the marinade.
  4. Place in the fridge and refrigerate for 2 to 4 hours.
  5. Preheat a grill for at medium-high heat (400-450°F).
  6. Remove steak from marinade.
  7. Grill steaks with the lid closed for 4-8 minutes per side, depending on the thickness.
  8. Remove steaks from the grill and allow to rest for 5 minutes.
  9. Slice thinly against the grain and serve with your favorite condiments.
There is no Cilantro in this picture, because I could not find it. So I used Coriandolo spice instead.
