Kiwi Lime Plumcake
This plumcake is so very moist and tender. It is made with fresh kiwi fruit and lime. This is a super easy recipe that looks great and tastes wonderful!
Ingredients
- 4 ripe kiwi peeled and chopped, and 2 extra kiwi for topping
- 1 green apple peel, cored and chopped
- 3/4 cup brown sugar
- 1 egg
- 1/2 cup olive oil
- 1 teaspoon Fresh grated lime peel
- 1 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon juice from lime
Instructions
- Slice and chop the apples and 4 kiwi, and place into a small saucepan.
- Add the add sugar and grated lime peel and bring to simmer for about 5 minutes, or until it the fruit has softened.
- Let the kiwi apple mixture cool.
- Pre-heat your oven to 350F.
- Prepare a loaf pan lined with parchment paper and set aside.
- In the mixing bowl of a stand up mixer, beat the eggs and olive oil with the whisk attachment.
- In a separate bowl, blend your flour, baking powder and salt.
- Add the flour mixture to the egg and oil mixture along with the lime juice and mix well.
- Once the kiwi mixture is cool, add the baking soda and stir, lots of bubbles will form.
- Add the Kiwi mixture to the standup mixer and mix everything well.
- Spoon the batter into your prepared loaf pan.
- Peel and slice the remaining two kiwi and arrange on top of the batter
- Bake for 45 to 55 minutes.
- Cool in pan, serve warm.
- Garnish with powdered sugar.
