Kiwi Lime Plumcake

 This plumcake is so very moist and tender. It is made with fresh kiwi fruit and lime. This is a super easy recipe that looks great and tastes wonderful!

Ingredients
  

  • 4 ripe kiwi peeled and chopped, and 2 extra kiwi for topping
  • 1 green apple peel, cored and chopped
  • 3/4 cup brown sugar
  • 1 egg
  • 1/2 cup olive oil
  • 1 teaspoon Fresh grated lime peel
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon juice from lime

Instructions
 

  • Slice and chop the apples and 4 kiwi, and place into a small saucepan.
  • Add the add sugar and grated lime peel and bring to simmer for about 5 minutes, or until it the fruit has softened.
  • Let the kiwi apple mixture cool.
  • Pre-heat your oven to 350F.
  • Prepare a loaf pan lined with parchment paper and set aside.
  • In the mixing bowl of a stand up mixer, beat the eggs and olive oil with the whisk attachment.
  • In a separate bowl, blend your flour, baking powder and salt.
  • Add the flour mixture to the egg and oil mixture along with the lime juice and mix well.
  • Once the kiwi mixture is cool, add the baking soda and stir, lots of bubbles will form.
  • Add the Kiwi mixture to the standup mixer and mix everything well.
  • Spoon the batter into your prepared loaf pan.
  • Peel and slice the remaining two kiwi and arrange on top of the batter
  • Bake for 45 to 55 minutes.
  • Cool in pan, serve warm.
  • Garnish with powdered sugar.
