Lentil, Mushroom and Potato Stew
This is another great fix it and forget it crockpot dinners!
Equipment
- crockpot
Ingredients
- 12 mushrooms sliced
- 6 potatoes cubed
- 4 cups vegetable broth
- 1 yellow onion chopped
- 2 cloves garlic minced
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 1/2 cup green lentils
- sea salt to taste
Instructions
- Add all the ingredients to a slow cooker.
- Cook for about 6-8 hours on low.
- Or cook for 3-4 hours on high.
- Check to make sure the potatoes are soft.
Notes
You can use whatever mushrooms you like portabella, button or chanterelle, really what ever you like or have gathered.
