Spiced Pear Bread
This is a great breakfast treat, snack or desert. You can serve this with caramel sauce or homemade whipped cream!
Ingredients
- 1/2 cup of melted butter
- 1/4 cup olive oil
- 1/2 cup brown sugar
- 3 eggs
- 1/3 cup of water
- 1 1/2 teaspoons vanilla extract see below for a homemade vanilla recipe
- 1 3/4 cup flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ground cloves
- 2 ripe pears
- 1 tablespoon old fashioned oats
- dust with powdered sugar
Instructions
- Preheat oven to 350F and line a loaf pan with parchment paper, set aside.
- In a large mixing bowl add the butter, oil, brown sugar, eggs, water and vanilla and whisk until smooth and well incorporated.
- In a another medium sized mixing bowl combine the flour, baking soda, salt, and spices and whisk to combine everything.
- Add the flour mixture to the wet ingredients a little as a time and whisking to combine.
- Transfer batter to the loaf pan and smooth out with a rubber spatula.
- Wash and dry your pears, and slice them into thing slices about 1/8″ thick.
- Place the sliced pears standing upright in alternating pattern across the whole bread.
- Garnish with oats.
- Bake for 40-45 minutes until golden brown and a toothpick comes out clean.
- Allow to cool for 10-15 minutes and then remove cake from the pan and cool all the way before slicing.
