Italian Pear Cake
Ingredients
- 1 1/2 cups all purpose flour
- 1/4 cup + 1 1/2 tablespoons cornstarch
- 1 1/2 teaspoons teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 cup sugar
- 3 large eggs room temperature
- 1 cup mascarpone cheese room temperature
- 2 1/2 tablespoons olive oil
- 1/4 teaspoon salt
- 3-4 medium sized pears
Instructions
- Pre-heat oven to 340°. Lightly grease and flour a 9″ spring-form pan, and set aside.
- Peel the pears, and chop two of them into 1/2″ cubes, and then slice the other two pears into thin slices and set aside.
- In a mixing bowl of a mixer add the eggs and sugar and cream on medium until the mixture is smooth and well incorporated.
- Add the Marscapone into the mixture and continue to mix over medium until incorporated.
- In a separate mixing bowl, whisk together the flour, salt, corn starch, baking powder and baking soda.
- Add the flour mixture into the egg mixture and stir with a wooden spoon, once that is mixed well add the oil and stir to combine.
- Fold in the cubed pears, and then transfer the batter into the spring-form pan.
- Top the cake with the sliced pears.
- Place the cake pan in the oven and bake 45 – 60 minutes, or until toothpick comes out clean.
Notes
You can use cream cheese for this if you do not have access to marscapone cheese.
This is a great classic pear cake. This makes a great addition to coffee time or after dinner desert!
