

Omelette Breakfast Muffins
These are great to grab and go, or sit down and enjoy!
Ingredients
- 6 eggs
- 1/2 cup fresh spinach chopped
- 1/2 cup bell pepper cubed
- 1/2 cup tomato diced
- 6 pinches gops (link below)
Instructions
- Preheat your oven to 350 degrees F.
- In a 6 cup muffin pan, place 6 muffin liners.
- In a medium sized mixing bowl, whisky your eggs together.
- Divide the toppings into each of the empty muffin cups.
- Sprinkle the each of the muffin toppings with a pinch of gops.
- Pour the egg mixture into the muffin cups, start with the egg mixture half way. Then evenly divide the excess into the muffin cups.
- Place in the oven and cook for 20 minutes.
Notes
You can add many different topping combinations and cheese!
- Tomatoes, Spinach and Mozzarella.
- Garlic, Mushrooms, Peppers and Mozzarella.
- Bacon, Cheddar and Tomato.
- Use your imagination!
I was always a fan of egg muffins on the go. I decided to make some of these for breakfast. And I forgot how much I really liked them!
