Omelette Breakfast Muffins

These are great to grab and go, or sit down and enjoy!

Ingredients
  

  • 6 eggs
  • 1/2 cup fresh spinach chopped
  • 1/2 cup bell pepper cubed
  • 1/2 cup tomato diced
  • 6 pinches gops (link below)

Instructions
 

  • Preheat your oven to 350 degrees F.
  • In a 6 cup muffin pan, place 6 muffin liners.
  • In a medium sized mixing bowl, whisky your eggs together.
  • Divide the toppings into each of the empty muffin cups.
  • Sprinkle the each of the muffin toppings with a pinch of gops.
  • Pour the egg mixture into the muffin cups, start with the egg mixture half way. Then evenly divide the excess into the muffin cups.
  • Place in the oven and cook for 20 minutes.

Notes

You can add many different topping combinations and cheese!
  • Tomatoes, Spinach and Mozzarella.
  • Garlic, Mushrooms, Peppers and Mozzarella.
  • Bacon, Cheddar and Tomato.
  • Use your imagination!

You can also double this recipe.  I do not have a 6 muffin tin, because my oven is small. All you need to do is double the recipe, 12 eggs and double all the ingredients.
