Omelette Breakfast Muffins
These are great to grab and go, or sit down and enjoy!

- 6 eggs
- 1/2 cup fresh spinach chopped
- 1/2 cup bell pepper cubed
- 1/2 cup tomato diced
- 6 pinches gops (link below)
Preheat your oven to 350 degrees F.
In a 6 cup muffin pan, place 6 muffin liners.
In a medium sized mixing bowl, whisky your eggs together.
Divide the toppings into each of the empty muffin cups.
Sprinkle the each of the muffin toppings with a pinch of gops.
Pour the egg mixture into the muffin cups, start with the egg mixture half way. Then evenly divide the excess into the muffin cups.
Place in the oven and cook for 20 minutes.
You can add many different topping combinations and cheese!
- Tomatoes, Spinach and Mozzarella.
- Garlic, Mushrooms, Peppers and Mozzarella.
- Bacon, Cheddar and Tomato.
- Use your imagination!

You can also double this recipe. I do not have a 6 muffin tin, because my oven is small. All you need to do is double the recipe, 12 eggs and double all the ingredients.
