Mediterranean Baked Yogurt Chicken
Ingredients
- 4 boneless skinless chicken breasts
- 3/4 cup nonfat plain Greek yogurt
- 1/2 cup Parmesan cheese
- 2 cloves garlic minced
- 1 tablespoon lemon juice
- 1 1/2 teaspoons spicy seasoning blend link below
- a pinch pepper
- a pinch homemade garlic salt link below
- 3 handfuls fresh spinach
- 1 tomato sliced
Instructions
- Preheat your oven to 375 degrees F.
- In a baking pan, place around 3 big handfuls for spinach and even it out in the bottom of the pan.
- Place the sliced tomatoes on top of the spinach.
- Place the chicken on top of the tomatoes, then season the chicken on both sides well with garlic salt and pepper.
- In a separate small bowl, add the yogurt, Parmesan, garlic, lemon juice, and the spicy seasoning and mix well.
- Pour the mixture over the chicken and make sure the chicken is completely coated.
- Bake for 35-45 minutes until chicken is cooked through. Baking time depends on how thick your chicken is.
This recipe came about by accident. All of these ingredients are on the weight watchers purple 0 point list. So you know where this is going. I think this is a 0 point meal…. but I am not *really* doing it to their standards……. I’m on their budget plan.. lol.
This dish was really great and flavorful, I love the lemon mixed in with yogurt. I also love a lot of garlic flavor in foods, especially mixed with the lemon and yogurt. This dish was crisp and super easy to make.
I served this with whole wheat rice, conditioned with the homemade garlic salt.
