Mediterranean Baked Yogurt Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 3/4 cup nonfat plain Greek yogurt
  • 1/2 cup Parmesan cheese
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons spicy seasoning blend link below
  • a pinch pepper
  • a pinch homemade garlic salt link below
  • 3 handfuls fresh spinach
  • 1 tomato sliced

Instructions
 

  • Preheat your oven to 375 degrees F.
  • In a baking pan, place around 3 big handfuls for spinach and even it out in the bottom of the pan.
  • Place the sliced tomatoes on top of the spinach.
  • Place the chicken on top of the tomatoes, then season the chicken on both sides well with garlic salt and pepper.
  • In a separate small bowl, add the yogurt, Parmesan, garlic, lemon juice, and the spicy seasoning and mix well.
  • Pour the mixture over the chicken and make sure the chicken is completely coated.
  • Bake for 35-45 minutes until chicken is cooked through. Baking time depends on how thick your chicken is.
