Pistacchio Pesto

Ingredients
  

  • 100 grams pistachios
  • 1/2 garlic clove
  • 1 handful of basil leaves
  • 1 handful of mint leaves
  • 10 grams Parmesan grated
  • 60 ml of olive oil
  • a pinch sea salt
  • a pinch freshly ground black pepper

Method
 

  1. Add the pistachios, garlic and herbs to a mortar and pestle. Then grind to a rough paste.
  2. You can use a food processor but, it is best to use the pestle.
  3. Then mix in the oil and Parmesan and stir until thoroughly combined.
  4. Taste and season salt and pepper and add the lemon juice.

I usually use this with pasta, or as a dip, or on crusty bread.

But the other day, it was Nicola’s birthday and I used this in a cheesecake.
