Mexican Style Nachos
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 3 tablespoons Mexican seasoning
- 16 oz jar salsa
- 1 bag corn chips
- 1 small can sliced black olives
- 1 1/2 cups shredded Mexican cheese blend
- 1 tomato diced
- 1 small red onion diced
- 1 jalapeño thinly sliced
- 1 handful fresh cilantro chopped
Optional Toppings
- 1 small can of corn drained
- 1 can of black beans drained
- sour cream and extra salsa for serving
Instructions
- Pre-heat your oven to 400°F.
- Line a baking sheet with parchment paper, se aside. In a skillet over medium-high heat, add olive oil and ground beef.
- Brown beef: Add olive oil to large skillet over medium-high heat, then add ground beef and cook until browned. Drain if desired, then stir in taco seasoning and salsa, remove from heat and set aside.
- On your prepared baking sheet, lay out the tortilla chips, in a semi-single layer.
- Then top them evenly with the ground beef.
- Layer on the cheese, olives, tomato, and any extra toppings you may want to add.
- Place the sheet pan into oven and bake until the cheese has melted, about 5-6 minutes.
- After you remove the nachos from the oven top with onions, jalapeño and cilantro and serve with sour cream and some extra added salsa.
Notes
I like to add the black beans and corn to my nachos. I whole heartedly believe, black beans, sour cream, salsa and jalapeños go together and they really should never be separated. 🤣
But, sometimes I cannot find the black beans in a can. I do have some black beans that are dehydrated, but I am not always responsible and plan ahead to re-hydrate them. And therefore, I did not have cilantro or black beans the other night for this delicious feast.
Cilantro is so hard to come by here, only one of the grocery stores here carries it. And it is a German based store.
