Mexican Style Nachos

These are just a good all around great nachos recipe and idea for extra additional toppings!

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 3 tablespoons Mexican seasoning
  • 16 oz jar salsa
  • 1 bag corn chips
  • 1 small can sliced black olives
  • 1 1/2 cups shredded Mexican cheese blend
  • 1 tomato diced
  • 1 small red onion diced
  • 1 jalapeño thinly sliced
  • 1 handful fresh cilantro chopped

Optional Toppings

  • 1 small can of corn drained
  • 1 can of black beans drained
  • sour cream and extra salsa for serving

Instructions
 

  • Pre-heat your oven to 400°F.
  • Line a baking sheet with parchment paper, se aside.

In a skillet over medium-high heat, add olive oil and ground beef.
  • Brown beef: Add olive oil to large skillet over medium-high heat, then add ground beef and cook until browned. Drain if desired, then stir in taco seasoning and salsa, remove from heat and set aside.
  • On your prepared baking sheet, lay out the tortilla chips, in a semi-single layer.
  • Then top them evenly with the ground beef.
  • Layer on the cheese, olives, tomato, and any extra toppings you may want to add.
  • Place the sheet pan into oven and bake until the cheese has melted, about 5-6 minutes.
  • After you remove the nachos from the oven top with onions, jalapeño and cilantro and serve with sour cream and some extra added salsa.
