Pre-heat your oven to 400°F.
Line a baking sheet with parchment paper, se aside.
In a skillet over medium-high heat, add olive oil and ground beef.
Brown beef: Add olive oil to large skillet over medium-high heat, then add ground beef and cook until browned. Drain if desired, then stir in taco seasoning and salsa, remove from heat and set aside.
On your prepared baking sheet, lay out the tortilla chips, in a semi-single layer.
Then top them evenly with the ground beef.
Layer on the cheese, olives, tomato, and any extra toppings you may want to add.
Place the sheet pan into oven and bake until the cheese has melted, about 5-6 minutes.
After you remove the nachos from the oven top with onions, jalapeño and cilantro and serve with sour cream and some extra added salsa.
