Lemon Poppy Seed Plumcake
The lemony goodness of this plumcake is great for a snack, breakfast or an after dinner treat!
Ingredients
- 3/4 cup flour
- 1/2 cup Sugar
- 3 Eggs
- 2/3 cup Butter
- 1/4 cup Corn Starch
- 2 tablespoon Lemon juice
- the zest of 2 Lemons
- 2 teaspoons baking powder
- 1 teaspoon Poppy seeds
Instructions
- Grease and flour a loaf pan and set aside.
- Preheat the oven to 375F.
- Melt the butter and let it cool. Meanwhile, sift the flour, starch and baking powder into a large bowl.
- In another bowl, add the eggs add the sugar and mix for a few minutes with a hand whisk.
- add in the grated lemon zest.
- Then pour in the juice and the powder mix. Also add the poppy seeds.
- Poor the butter into the prepared loaf pan.
- Then pour the batter into the loaf pan.
- Place the loaf pan in the preheated oven for 45 minutes. Do the toothpick test to check for doneness.
