Lemon Poppy Seed Plumcake

The lemony goodness of this plumcake is great for a snack, breakfast or an after dinner treat!

Ingredients
  

  • 3/4 cup flour
  • 1/2 cup Sugar
  • 3 Eggs
  • 2/3 cup Butter
  • 1/4 cup Corn Starch
  • 2 tablespoon Lemon juice
  • the zest of 2 Lemons
  • 2 teaspoons baking powder
  • 1 teaspoon Poppy seeds

Instructions
 

  • Grease and flour a loaf pan and set aside.
  • Preheat the oven to 375F.
  • Melt the butter and let it cool. Meanwhile, sift the flour, starch and baking powder into a large bowl.
  • In another bowl, add the eggs add the sugar and mix for a few minutes with a hand whisk.
  • add in the grated lemon zest.
  • Then pour in the juice and the powder mix. Also add the poppy seeds.
  • Poor the butter into the prepared loaf pan.
  • Then pour the batter into the loaf pan.
  • Place the loaf pan in the preheated oven for 45 minutes. Do the toothpick test to check for doneness.
