Hearty Cabbage Roll Soup

This is a delicious way to enjoy cabbage rolls in soup form! This is great for fall and winter and will warm you up.

Ingredients
  

  • 1 1/2 -2 pounds ground sausage or lean ground beef
  • 1 tablespoon Olive oil
  • 1 large onion chopped
  • 1 clove garlic minced
  • 1 small cabbage chopped
  • 2 large diced tomatoes
  • 12 oz of tomato puree or sauce
  • 1 cup chicken broth
  • 1 cup uncooked rice
  • Gops to taste

Instructions
 

  • in a soup pot, heat up the olive oil over medium heat.
  • Saute’ the onions until tender, and then add the ground sausage or ground beef and cook until the meat is browned.
  • Add in the the minced garlic and cook for an additional minute before adding the rice.
  • Stir the rice until the rice has soaked up the juices and then add the broth.
  • Stir in the rest of the ingredients.
  • Bring the soup up to a boil, and cover the pot.
  • Reduce the heat to low, and simmer about 25 minutes or until the rice is cooked.
  • Check frequently to make sure the soup isn’t getting too thick, you can keep adding water as needed.
