Hearty Cabbage Roll Soup
This is a delicious way to enjoy cabbage rolls in soup form! This is great for fall and winter and will warm you up.
Ingredients
- 1 1/2 -2 pounds ground sausage or lean ground beef
- 1 tablespoon Olive oil
- 1 large onion chopped
- 1 clove garlic minced
- 1 small cabbage chopped
- 2 large diced tomatoes
- 12 oz of tomato puree or sauce
- 1 cup chicken broth
- 1 cup uncooked rice
- Gops to taste
Instructions
- in a soup pot, heat up the olive oil over medium heat.
- Saute’ the onions until tender, and then add the ground sausage or ground beef and cook until the meat is browned.
- Add in the the minced garlic and cook for an additional minute before adding the rice.
- Stir the rice until the rice has soaked up the juices and then add the broth.
- Stir in the rest of the ingredients.
- Bring the soup up to a boil, and cover the pot.
- Reduce the heat to low, and simmer about 25 minutes or until the rice is cooked.
- Check frequently to make sure the soup isn’t getting too thick, you can keep adding water as needed.
