Lemon Poppy Seed Plumcake

- 3/4 cup flour
- 1/2 cup Sugar
- 3 Eggs
- 2/3 cup Butter
- 1/4 cup Corn Starch
- 2 tablespoon Lemon juice
- the zest of 2 Lemons
- 2 teaspoons baking powder
- 1 teaspoon Poppy seeds
Grease and flour a loaf pan and set aside.
Preheat the oven to 375F.
Melt the butter and let it cool. Meanwhile, sift the flour, starch and baking powder into a large bowl.
In another bowl, add the eggs add the sugar and mix for a few minutes with a hand whisk.
add in the grated lemon zest.
Then pour in the juice and the powder mix. Also add the poppy seeds.
Poor the butter into the prepared loaf pan.
Then pour the batter into the loaf pan.
Place the loaf pan in the preheated oven for 45 minutes. Do the toothpick test to check for doneness.
