Banana Zucchine Bread
Since Zucchine is in season, this is a great addition to add to your zucchini recipe collection. This bread is moist, fluffy and the one of the best you'll eat. It's perfect for breakfast, after dinner or a snack. This is a delicious and tasty way to use up all your garden fresh zucchini.
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons cinnamon
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup olive oil
- 1/2 cup brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 medium bananas mashed
- 1 cup grated zucchini with excess water squeezed out
Instructions
- Preheat the oven to 350F degrees.
- Line a loaf pan with parchment paper, and set aside.
- In a medium bowl whisk together the flour, cinnamon, baking powder, baking soda & salt.
- In a separate large bowl mix together the oil and sugar until it is well incorporated.
- Whisk in the eggs and vanilla extract then stir in the mashed bananas.
- Fold the flour mixture into the banana mixture.
- Then fold in the grated zucchini.
- Pour into the prepared pan and bake for 50-60 minutes. Check for doneness with a toothpick.
- Cool fully before slicing.
