Banana Zucchine Bread

Since Zucchine is in season, this is a great addition to add to your zucchini recipe collection. This bread is moist, fluffy and the one of the best you'll eat. It's perfect for breakfast, after dinner or a snack. This is a delicious and tasty way to use up all your garden fresh zucchini.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup olive oil
  • 1/2 cup brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 medium bananas mashed
  • 1 cup grated zucchini with excess water squeezed out

Instructions
 

  • Preheat the oven to 350F degrees.
  • Line a loaf pan with parchment paper, and set aside.
  • In a medium bowl whisk together the flour, cinnamon, baking powder, baking soda & salt.
  • In a separate large bowl mix together the oil and sugar until it is well incorporated.
  • Whisk in the eggs and vanilla extract then stir in the mashed bananas.
  • Fold the flour mixture into the banana mixture.
  • Then fold in the grated zucchini.
  • Pour into the prepared pan and bake for 50-60 minutes. Check for doneness with a toothpick.
  • Cool fully before slicing.
