Banana Zucchine Bread
Since Zucchine is in season, this is a great addition to add to your zucchini recipe collection. This bread is moist, fluffy and the one of the best you'll eat. It's perfect for breakfast, after dinner or a snack. This is a delicious and tasty way to use up all your garden fresh zucchini.

- 2 cups all-purpose flour
- 2 teaspoons cinnamon
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup olive oil
- 1/2 cup brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 medium bananas mashed
- 1 cup grated zucchini with excess water squeezed out
Preheat the oven to 350F degrees.
Line a loaf pan with parchment paper, and set aside.
In a medium bowl whisk together the flour, cinnamon, baking powder, baking soda & salt.
In a separate large bowl mix together the oil and sugar until it is well incorporated.
Whisk in the eggs and vanilla extract then stir in the mashed bananas.
Fold the flour mixture into the banana mixture.
Then fold in the grated zucchini.
Pour into the prepared pan and bake for 50-60 minutes. Check for doneness with a toothpick.
Cool fully before slicing.
