Mediterranean White Bean Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 large shallot chopped
  • 2 garlic cloves minced
  • 1 zucchini halved and sliced
  • 1 large carrot chopped
  • 8 oz mushrooms sliced
  • 6 cups vegetable or chicken broth
  • 1 tablespoon homemade sicilian spice see link below
  • 1 teaspoon red crushed pepper flakes
  • a pinch of salt and pepper
  • 3 15- ounces canned cannellini beans drained and rinsed
  • 2 cups baby spinach
  • Fresh parsley for serving
  • Grated parmesan cheese for serving

Instructions
 

  • In a large pot or saucepan, heat olive over medium high heat. Add shallots, carrots, garlic and mushrooms. Cook until all vegetables are soft. about 3-5 minutes.
  • Add the Sicilian Spice, red pepper, salt and pepper and cook for another 2-3 minutes.
  • Once the vegetables are cooked, add the broth and beans, bring to a boil, reduce heat and simmer for 15 minutes.
  • Stir in the spinach and continue to simmer until the spinach wilts.
  • Serve with fresh grated parsley and parmesan cheese
