Instructions
In a large pot or saucepan, heat olive over medium high heat. Add shallots, carrots, garlic and mushrooms. Cook until all vegetables are soft. about 3-5 minutes.
Add the Sicilian Spice, red pepper, salt and pepper and cook for another 2-3 minutes.
Once the vegetables are cooked, add the broth and beans, bring to a boil, reduce heat and simmer for 15 minutes.
Stir in the spinach and continue to simmer until the spinach wilts.
Serve with fresh grated parsley and parmesan cheese
