My friend Sydney made these one time, and told me what she put in them. Then I saw these on a menu in an Irish bar when we were at a bachelorette party. One of the girls that was there with us, ate brussel sprouts for the first time that night, and actually cried. (There may have been drinks involved!)

Guinness Braised Brussel Sprouts

These are Oh My God Good, we eat these a lot and not just for St. Patrick's Day!

Ingredients
  

  • 2 heaping cups Brussels sprouts halved
  • 2 tablespoons grainy mustard
  • 1 clove garlic minced
  • 1/2 cup Guinness Stout
  • 1 pinch each sea salt and pepper
  • 1 tablespoon olive oil

Instructions
 

  • In a large pot over medium heat add the oil and garlic, sauté for a minute or two, then add the halved Brussels sprouts.
  • Sprinkle with salt and pepper, and continue to cook the sprouts, stirring frequently.
  • Once, the Brussels have started to brown, pour in the Guinness and braise the brussels with the Guinness, once the steam has settled, add in the mustard and mix well to combine.
  • Keep stirring until the brussel sprouts are soft and browned, and the Guinness has reduced and formed a roux like substance with the mustard.
