Leftover Turkey Tex-Mex Soup
This is our favorite left over Turkey recipe. This soup is Oh my God Good!
Ingredients
- 1 1/2 tablespoons olive oil
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1 teaspoon chipotle chili powder or more
- 1 teaspoons dried oregano
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 2 cups chicken stock or turkey
- 2 cups cooked turkey
- 1 can fire-roasted tomatoes undrained
- 4.5 ounce can green chiles undrained
- 12 ounces rice black, red, regular
- 14 ounce can full-fat coconut milk
- 1/2 cup fresh cilantro chopped optional
Instructions
- Heat olive oil in a large pot over medium heat, then add onion, cook until softened about 5 minutes.
- Add garlic, and sauté until fragrant, about 30 seconds to 1 minute.
- Add in spices and salt and stir for 30 seconds, mixing everything well.
- Pour in stock, tomatoes, chiles, cooked turkey, rice, and coconut milk and stir until smooth.
- Bring to a simmer over medium heat.
- Simmer for about 10 minutes and stir in chopped cilantro.
- Serve hot with whatever toppings you would like!
