Heat olive oil in a large pot over medium heat, then add onion, cook until softened about 5 minutes.
Add garlic, and sauté until fragrant, about 30 seconds to 1 minute.
Add in spices and salt and stir for 30 seconds, mixing everything well.
Pour in stock, tomatoes, chiles, cooked turkey, rice, and coconut milk and stir until smooth.
Bring to a simmer over medium heat.
Simmer for about 10 minutes and stir in chopped cilantro.
Serve hot with whatever toppings you would like!
