Minestrone Soup

This is a hearty soup, great to warm you up on any chilly night!

Ingredients
  

  • 1 clove of garlic minced
  • 1 red onion diced
  • 2 carrots diced
  • 2 stalks celery diced
  • 1 large potato diced
  • 1 can cannellini beans drained
  • 1/2 lb smoked bacon sliced and cubed
  • olive oil
  • ½ teaspoon dried oregano
  • 1 fresh bay leaf
  • 1 liter vegetable or chicken stock
  • 1 large handful of seasonal greens savoy cabbage, curly kale, chard, chopped
  • 1 small bunch of fresh basil
  • 1 spring fresh rosemary
  • Parmesan cheese

Method
 

  1. Heat 2 tablespoons of oil in a large pot over a medium heat. Add the bacon and fry until crispy.
  2. Add the garlic, onion, carrots, celery, and herbs and cook slowly for about 15 minutes, or until the vegetables have softened, stirring occasionally.
  3. Add the potato, cannellini beans then pour in the vegetable stock.
  4. Cover with a lid and bring everything slowly to a boil, then turn the heat down and simmer for about 30 minutes, or until the potato is cooked all the way through.
  5. Add the greens to the pot and cook for a further 10 minutes.
  6. If the soup is too thick add more stock to loosen it.
  7. Season to taste with sea salt and black pepper.
  8. Serve warm with freshly grated parmesan cheese.

Notes

You can use as many vegetables as you would like, and even add more vegetables.
