Air Fryer Scotch Eggs
If you have never had these, these are great. I love a Scotch breakfast! But these you can eat any time of day.

Ingredients
- 1 pound uncooked bulk sausage
- 5-6 eggs hard boiled
- 1-2 raw eggs beaten
- 1 cup bread crumbs
Instructions
- Peel hard boiled eggs, set aside.
- Divide the sausage into 5 or 6 equal parts, depending on how many boiled eggs you have made.
- Prepare a bowl, with the beaten egg inside, and prepare a dish with the bread crumbs, set both aside.
- Take a portion of sausage in your hand and flatten it into a thin patty.
- Place a boiled egg in center and wrap sausage around the whole egg, do this for all the eggs.
- Now dip sausage-egg into the beaten raw egg, then into the breadcrumbs.
- Spray the outside of the egg evenly with some oil.
- Air Fry at 400°F for 12-16 minutes, and turn halfway through cooking.
- If you have a thick sausage layer, the sausage will take longer to cook.
- Serve hot and enjoy!
