Air Fryer Coconut Shrimp
This is super easy and yummy coconut shrimp recipe. And not the calorie bomb

Ingredients
- ½ cup all-purpose flour
- 1 ½ teaspoons ground black pepper
- 2 eggs
- ⅔ cup unsweetened flaked coconut
- ⅓ cup panko bread crumbs
- 12 ounces uncooked medium shrimp peeled and deveined
- cooking spray
- salt
Instructions
- Stir together flour and pepper in shallow dish and set aside.
- In a second shallow dish add the eggs and beat them and set aside.
- Stir together coconut and panko in a third shallow dish, and set aside.
- Dredge one shrimp in flour mixture, then dip the shrimp in egg, and dredge into coconut mixture, making sure the shrimp is fully covered. Place on a plate and repeat for all of the shrimp.
- Coat shrimp well with cooking spray.
- Place the shrimp in the Air fryer pan, do not overlap, you may have to cook in a few batches and set the fryer to 400F.
- Cook about 3 minutes then turn shrimp over and continue cooking until golden, about 3 minutes more.
- Season with a sprinkle of salt. Repeat with remaining shrimp.
