Air Fryer Coconut Shrimp

This is super easy and yummy coconut shrimp recipe. And not the calorie bomb

Equipment

Ingredients
  

  • ½ cup all-purpose flour
  • 1 ½ teaspoons ground black pepper
  • 2 eggs
  • cup unsweetened flaked coconut
  • cup panko bread crumbs
  • 12 ounces uncooked medium shrimp peeled and deveined
  • cooking spray
  • salt

Instructions
 

  • Stir together flour and pepper in shallow dish and set aside.
  • In a second shallow dish add the eggs and beat them and set aside.
  • Stir together coconut and panko in a third shallow dish, and set aside.
  • Dredge one shrimp in flour mixture, then dip the shrimp in egg, and dredge into coconut mixture, making sure the shrimp is fully covered. Place on a plate and repeat for all of the shrimp.
  • Coat shrimp well with cooking spray.
  • Place the shrimp in the Air fryer pan, do not overlap, you may have to cook in a few batches and set the fryer to 400F.
  • Cook about 3 minutes then turn shrimp over and continue cooking until golden, about 3 minutes more.
  • Season with a sprinkle of salt. Repeat with remaining shrimp.
