Easy Taco Soup

This is a super easy fast and flavorful soup. It can quickly become a weeknight favorite!

Ingredients
  

  • 1 pound ground beef
  • 1 tablespoons olive oil
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 16 oz can beans drained black, kidney, cannelloni
  • 1 cup corn
  • 1 1/2 cups diced tomatoes diced
  • 3 garlic cloves minced
  • 2 cups beef broth
  • 2 tablespoons Homemade Mexican Seasoning link below

Instructions
 

  • In a Dutch oven heat oil over medium high heat, add the garlic and sautè until fragrant.
  • Add the ground meat and sauté the meat while breaking it up as it’s cooking.
  • Season with the homemade Mexican seasoning.
  • Once the meat is browned, add the remaining ingredients.
  • Cook over low heat for 20 minutes.
  • Serve hot with sour cream and tortillas, or fresh cilantro!
