Easy Taco Soup
This is a super easy fast and flavorful soup. It can quickly become a weeknight favorite!
Ingredients
- 1 pound ground beef
- 1 tablespoons olive oil
- 1 small onion finely diced
- 2 cloves garlic minced
- 1 red bell pepper diced
- 1 green bell pepper diced
- 16 oz can beans drained black, kidney, cannelloni
- 1 cup corn
- 1 1/2 cups diced tomatoes diced
- 3 garlic cloves minced
- 2 cups beef broth
- 2 tablespoons Homemade Mexican Seasoning link below
Instructions
- In a Dutch oven heat oil over medium high heat, add the garlic and sautè until fragrant.
- Add the ground meat and sauté the meat while breaking it up as it’s cooking.
- Season with the homemade Mexican seasoning.
- Once the meat is browned, add the remaining ingredients.
- Cook over low heat for 20 minutes.
- Serve hot with sour cream and tortillas, or fresh cilantro!
