Easy Taco Soup
This is a super easy fast and flavorful soup. It can quickly become a weeknight favorite!

- 1 pound ground beef
- 1 tablespoons olive oil
- 1 small onion finely diced
- 2 cloves garlic minced
- 1 red bell pepper diced
- 1 green bell pepper diced
- 16 oz can beans drained black, kidney, cannelloni
- 1 cup corn
- 1 1/2 cups diced tomatoes diced
- 3 garlic cloves minced
- 2 cups beef broth
- 2 tablespoons Homemade Mexican Seasoning link below
In a Dutch oven heat oil over medium high heat, add the garlic and sautè until fragrant.
Add the ground meat and sauté the meat while breaking it up as it’s cooking.
Season with the homemade Mexican seasoning.
Once the meat is browned, add the remaining ingredients.
Cook over low heat for 20 minutes.
Serve hot with sour cream and tortillas, or fresh cilantro!
