Jalapeño Popper Baked Chicken
Ingredients
- 4 chicken breasts
- 2 cups breadcrumbs
- 3 eggs, beaten
- 4 jalapeños opened and deseeded
- 5 cheddar cheese slices or 3/4 cup shredded cheddar
- 4 ounces cream cheese
- 4 slices bacon
- 4 potatoes cubed

Instructions
- Preheat the oven to 350 F.
- Cut a slit down the center of the chicken breast and set aside.
- Prepare two bowls, one with the eggs and another with the bread crumbs.
- In a small bowl, mix the cream cheese with a pinch of gops, and a few pinches of shredded cheddar or 1 piece of cheddar cut into small pieces.
- Fill the jalapeños with the cream cheese mixture and set aside.
- In a casserole pan, add the potatoes and set aside.
- Bread the chicken breasts, buy dipping them in the egg mixture and then the breadcrumbs.
- Arrange the chicken breasts over the potatoes in the casserole pan.
- In the slit of the chicken, line the slit with bacon.
- Add the jalapeño into the slit and place in the oven. Cook for 45 minutes to an hour depending on the thickness of the chicken.
- During the last 10 minutes of baking, add a slice of cheddar on top of each chicken breast. You can broil for 5 minutes to crisp up the cheese.

I found cheddar cheese in the supermarket yesterday, and I got an idea to make Jalapeño popper chicken. I saw a video somewhere that had the idea to stuff the chicken with the jalapeño, but I couldn’t remember where I saw it or how long ago. But I was able to find spicy peppers at the supermarket as well, they weren’t Jalapeños. But they did the job just fine, and I think they were more spicy than jalapeños!
Maybe I like my cheese a little too crunch!
