Preheat the oven to 350 F.
Cut a slit down the center of the chicken breast and set aside.
Prepare two bowls, one with the eggs and another with the bread crumbs.
In a small bowl, mix the cream cheese with a pinch of gops, and a few pinches of shredded cheddar or 1 piece of cheddar cut into small pieces.
Fill the jalapeños with the cream cheese mixture and set aside.
In a casserole pan, add the potatoes and set aside.
Bread the chicken breasts, buy dipping them in the egg mixture and then the breadcrumbs.
Arrange the chicken breasts over the potatoes in the casserole pan.
In the slit of the chicken, line the slit with bacon.
Add the jalapeño into the slit and place in the oven. Cook for 45 minutes to an hour depending on the thickness of the chicken.
During the last 10 minutes of baking, add a slice of cheddar on top of each chicken breast. You can broil for 5 minutes to crisp up the cheese.
