With the season of summer garden vegetables coming to an end. This is a great salad to utilize some of the last of your vegetables from the garden.
End of Summer Salad
Ingredients
- 4 cups farro already prepared
- 1 8 oz ball of fresh mozzarella diced
- 2 ears of corn cooked and kernels removed from cob
- 2 to matoes diced
- 2 cucumbers diced
- 2 peppers diced any color
- 15 oz cannellini beans
- 1/2 cup extra vergine olive oil
- 1/2 cup apple cider vinegar with the mother
- 1 tablespoon sicilian spice link below
- salt and pepper to taste
Instructions
- In a small mixing bowl, whisk together the olive oil and apple cider vinegar, set aside.
- In a large mixing bowl add all of the vegetables.
- Add the Sicilian spice and salt and pepper to taste, mix well.
- Add the oil and vinegar mixture and toss.
Notes
If you have never made homemade spices to use in your meals, I suggest you try it at least once in your life. They are amazing.
