With the season of summer garden vegetables coming to an end. This is a great salad to utilize some of the last of your vegetables from the garden.

End of Summer Salad

Ingredients
  

  • 4 cups farro already prepared
  • 1 8 oz ball of fresh mozzarella diced
  • 2 ears of corn cooked and kernels removed from cob
  • 2 to matoes diced
  • 2 cucumbers diced
  • 2 peppers diced any color
  • 15 oz cannellini beans
  • 1/2 cup extra vergine olive oil
  • 1/2 cup apple cider vinegar with the mother
  • 1 tablespoon sicilian spice link below
  • salt and pepper to taste

Instructions
 

  • In a small mixing bowl, whisk together the olive oil and apple cider vinegar, set aside.
  • In a large mixing bowl add all of the vegetables.
  • Add the Sicilian spice and salt and pepper to taste, mix well.
  • Add the oil and vinegar mixture and toss.

If you have never made homemade spices to use in your meals, I suggest you try it at least once in your life. They are amazing.

In this recipe I used Homemade Sicilian spice. I use it in almost everything I make!
