Mediterranean Farro Salad

Ingredients
  

  • 1 large zucchine halved and sliced
  • 2 medium tomatoes diced
  • 15 oz olives black or Kalamata
  • 4 cups farro cooked
  • 2 tablespoons olive oil plus extra for drizzling
  • 1 teaspoon homemade garlic salt https://sweetteaitalia.com/2020/06/homemade-garlic-salt.html
  • 1 tablespoon spicy seasoning blend https://sweetteaitalia.com/2020/06/spicy-seasoning-blend.html
  • a pinch each of salt and pepper

Method
 

  1. Add the Olive oil to a skillet over medium-high heat.
  2. Place the zucchini in the skillet and top with garlic salt and spicy seasoning blend.
  3. Mix and sauté until the zucchini are tender but not mushy, about 5 minutes.
  4. In a serving bowl add the farro, tomatoes and olives and mix to combine.
  5. Drizzle with olive oil and a pinch each of salt and pepper.
  6. Add the zucchini and mix well.
  7. Serve warm or cold

This is a great recipe to make with some of the zucchini that is in abundance right now.
