Mediterranean Farro Salad

Ingredients
  

  • 1 large zucchine halved and sliced
  • 2 medium tomatoes diced
  • 15 oz olives black or Kalamata
  • 4 cups farro cooked
  • 2 tablespoons olive oil plus extra for drizzling
  • 1 teaspoon homemade garlic salt https://sweetteaitalia.com/2020/06/homemade-garlic-salt.html
  • 1 tablespoon spicy seasoning blend https://sweetteaitalia.com/2020/06/spicy-seasoning-blend.html
  • a pinch each of salt and pepper

Instructions
 

  • Add the Olive oil to a skillet over medium-high heat.
  • Place the zucchini in the skillet and top with garlic salt and spicy seasoning blend.
  • Mix and sauté until the zucchini are tender but not mushy, about 5 minutes.
  • In a serving bowl add the farro, tomatoes and olives and mix to combine.
  • Drizzle with olive oil and a pinch each of salt and pepper.
  • Add the zucchini and mix well.
  • Serve warm or cold
