Mediterranean Farro Salad
Ingredients
- 1 large zucchine halved and sliced
- 2 medium tomatoes diced
- 15 oz olives black or Kalamata
- 4 cups farro cooked
- 2 tablespoons olive oil plus extra for drizzling
- 1 teaspoon homemade garlic salt https://sweetteaitalia.com/2020/06/homemade-garlic-salt.html
- 1 tablespoon spicy seasoning blend https://sweetteaitalia.com/2020/06/spicy-seasoning-blend.html
- a pinch each of salt and pepper
Instructions
- Add the Olive oil to a skillet over medium-high heat.
- Place the zucchini in the skillet and top with garlic salt and spicy seasoning blend.
- Mix and sauté until the zucchini are tender but not mushy, about 5 minutes.
- In a serving bowl add the farro, tomatoes and olives and mix to combine.
- Drizzle with olive oil and a pinch each of salt and pepper.
- Add the zucchini and mix well.
- Serve warm or cold
This is a great recipe to make with some of the zucchini that is in abundance right now.
