Method
- Add the Olive oil to a skillet over medium-high heat.
- Place the zucchini in the skillet and top with garlic salt and spicy seasoning blend.
- Mix and sauté until the zucchini are tender but not mushy, about 5 minutes.
- In a serving bowl add the farro, tomatoes and olives and mix to combine.
- Drizzle with olive oil and a pinch each of salt and pepper.
- Add the zucchini and mix well.
- Serve warm or cold
