large zucchine
halved and sliced

medium tomatoes
diced

olives
black or Kalamata

farro
cooked

olive oil
plus extra for drizzling

homemade garlic salt

a pinch each of salt and pepper
Instructions
Add the Olive oil to a skillet over medium-high heat.
Place the zucchini in the skillet and top with garlic salt and spicy seasoning blend.
Mix and sauté until the zucchini are tender but not mushy, about 5 minutes.
In a serving bowl add the farro, tomatoes and olives and mix to combine.
Drizzle with olive oil and a pinch each of salt and pepper.
Add the zucchini and mix well.
Serve warm or cold
