Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1/4 cup sugar
- 1/4 cup Greek yogurt
- 1 cup mashed ripe banana
- 3/4 cup diced fresh strawberries
- 1/2 chopped walnuts
Instructions
Preheat your oven to 350F
Line a loaf pan with parchment paper. I like using parchment paper because, you don’t risk the cake sticking to your pan.
In a mixing bowl, add the flour, cinnamon, baking soda, baking powder and salt, mix all of this together.
In another larger mixing bowl, add the banana and mash it with a fork.
Then add the eggs, sugar and yogurt, mix with the fork until it is mixed well.
Add the strawberries and walnuts, and fold gently with a spoon.
Add the flour mixture into your banana strawberry mixture and stir as gently as you can.
Pour this batter into your loaf pan and spread it out evenly.
Bake for 45 minutes to 1 hour. Use the toothpick comes out clean test.
Remove the bread from the oven and let it cool for a few minutes, then pick the loaf up by the parchment paper and set aside to cool on a wire rack.
