Ingredients

  • 8 pieces of Mortadella
  • 1 3/4 cups ricotta (400g)
  • 4 tablespoons of bread crumbs
  • 1 egg
  • a pinch of gops
  • 4 tablespoons of fresh grated Parmigiana

Directions

  1. Preheat your oven to 400F.
  2. Line a baking sheet with parchment paper, and set aside.
  3. In a mixing bowl, mix the ricotta with salt and pepper.
  4. Then add in the egg, breadcrumbs and grated cheese, mix well to combine.
  5. Take one slice of mortadella and place some of the ricotta mixture in the middle. Then fold two sides over and then roll to make the involtini.
  6. Position the mortadella involtini on the baking sheet.
  7. Sprinkle the tops with some extra grated cheese.
  8. Place in the oven and cook for about 15 minutes
