Ingredients
- 8 pieces of Mortadella
- 1 3/4 cups ricotta (400g)
- 4 tablespoons of bread crumbs
- 1 egg
- a pinch of gops
- 4 tablespoons of fresh grated Parmigiana
Directions
- Preheat your oven to 400F.
- Line a baking sheet with parchment paper, and set aside.
- In a mixing bowl, mix the ricotta with salt and pepper.
- Then add in the egg, breadcrumbs and grated cheese, mix well to combine.
- Take one slice of mortadella and place some of the ricotta mixture in the middle. Then fold two sides over and then roll to make the involtini.
- Position the mortadella involtini on the baking sheet.
- Sprinkle the tops with some extra grated cheese.
- Place in the oven and cook for about 15 minutes
