Ingredients

  • 3 ripe Bananas
  • 1/3 cup olive oil
  • 1/2 c sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • a pinch of salt
  • 1 1/2 cup chopped walnuts or chocolate chips (even half walnuts and chocolate chip)

Directions

  1. Preheat your oven to 350F.
  2. Line a loaf pan with parchment paper, and set aside.
  3. In a mixing bowl, add the bananas and mash well with a fork.
  4. Add the oil, and mix well, then add the sugar, egg and vanilla.
  5. Mix well to incorporate.
  6. Sprinkle the cinnamon, baking powder and soda, then mix well.
  7. Add the flour and walnuts or chocolate chips or the mixture of both, and stir until the flour is well incorporated.
  8. Poor the batter into your loaf pan and even it out, then place it in your oven and bake for 45-60 minutes. Check by using a toothpick inserted in the middle of the bread, and if it comes out clean the cake is done.
  9. Let the pan cool for about 10 minutes, then transfer the bread to a wire rack to cook completely.
