1 head of Cabbage
Extra virgin Olive oil
Garlic powder, Salt and Pepper
Heat the ooven to 400 degrees.
Cut the cabbage up into 1/2″ thick slices
Lightly coat both sides of the cabbage slices with olive oil.
The season to taste on both sides of the cabbage slices.
Arrange them on a baking sheet and cook for 20 minutes, then gently flip them and cook for another 20 minutes.
Pair with your favorite protein and enjoy!.

This was on the menu as last nights vegetable.. We also made a new recipe with baking chicken on one of those air fryers that I found in the dollar store of all places.. I was kind of skeptical but it actually worked out good…
The chicken was not dry or oily… I did use Betty Rocker’s Chicken Nuggets recipe.. Although I did not make these into nuggets…. And this is supposed to be the dinner for her 1st day of her plan.. but, we decided to try it last night.. and use the Alternative for dinner tonight..
Here is her recipe for it:
chicken nuggets
Yield: 4 servings
You will need: knife, cutting board, baking sheet, parchment paper, whisk, mixing bowls,
measuring cups and spoons
1 lb boneless, skinless chicken breast
2 eggs
1 cup almond meal flour
1 cup unsweetened shredded coconut
1 tsp garlic powder
1 tsp onion powder
1/2 tsp sea salt
1/4 tsp black pepper
1. Preheat oven to 350. Line a baking sheet with parchment paper and set aside.
2. Prepare chicken by cutting it into even sized pieces.
3. Set out 2 bowls. In the first bowl, beat egg. In the second bowl, combine almond meal flour, coconut flakes and spices.
4. Dip chicken into egg, then into batter to coat. Be sure you’ve gotten the entire piece of chicken covered. Lay it on the baking sheet.
5. Coat all chicken and bake for 20-25 minutes, or until batter begins to brown slightly on the outside and the chicken is cooked through.
