Baked Acorn Squash
1 Acorn Squash (Halved, seeded, and sliced into 3/4-inch-thick crescent slices.)
Pepper, and garlic salt (to taste)
Olive oil
and about 1/2 cup of grated Parmesan cheese
Place a rack in the upper and lower thirds of the oven and preheat the oven to 400 degrees F.
Line two rimmed baking sheets with aluminum foil and lightly coat with cooking spray (I use Olive Oil Spray).
Arrange the Acorn Squash slices in a single layer on the prepared baking sheets.
Brush the squash with Olive oil on the top, then sprinkle with pepper and garlic salt. Then grate the Parmesan cheese over the squash slices.
and bake for about 25-30 minutes until the squash is browned, and fork tender.
Serve with other baked vegetables and a baked potato as pictured above!
We had never had Acorn squash, and I was at the grocery store, buying the staple fall squashes like pumpkins and butternut squash when I picked this up and got to thinking about it.
I was very pleasantly please with the taste and I can’t wait to make it again!
