The other afternoon Elena asked me to make her Pumpkin Soup.  I had made this recipe up on a whim and she absolutely loves it…

Ultimate Pumpkin Spice Soup
Serves 2

Ingredients:
1 can of pumpkin puree
2+ cups of unsweetened almond milk
1/2 tsp cinnamon
1/4 tsp cloves ( I originally used 1/2 tsp. but, I love cloves)
1/2 tsp ginger
1/2 tsp garlic
salt and pepper to taste
1/4 cup of sour cream.

In a small sauce pan over medium heat, add the pumpkin puree and almond milk and stir well.  You may need to add more milk depending on the consistency that you want to achieve.
When the pumpkin and the almond milk are mixed together add the spices. And  keep stirring constantly. Then add the sour cream.

Serve warm in bowls. 

This is a savory type of pumpkin soup and you can taste the spices.  We love it.
