Elena’s Birthday is on Friday… So I decided to make her a Pumpkin Cheesecake.  There are not many ways you can  make a cheesecake without some of the main ingredients.. but, I searched all around the wild world of webland to find a New York Style Pumpkin Cheesecake. That cheesecake looked like I could work with it to make it at lease semi-healthy.  This one is adapted from Sixdollar family..


Ingredients for Crust:
2 ½ Cups Graham Cracker Crumbs
1 Teaspoon Cinnamon
4 tbsp Butter (melted)

Ingredients for Cake
4 packages of Neufchatel, Softened
1 can pumpkin puree
2/3 Cup stevia in the raw
½ Cup Sour Cream
¼ Tablespoons unbleached organic Flour
2 Teaspoons Vanilla
4 eggs
2 Teaspoons Pumpkin Pie Spice

Instructions
First and foremost, preheat the oven…. 375 in this situation..

In my magic bullet I processed 3 packages of honey graham crackers. added those to a small bowl, mix together with the cinnamon and melted butter to form the crust.
I pressed the crust into a 9″ springform pan.  there was enough crust to cover the bottom and all the way up the sides.

In my kitchen aid with the paddle attachment I creamed together cream cheese, stevia, sour cream and eggs until pretty smooth.  Then blended in pumpkin puree, flour and pumpkin pie spice slowly until well mixed.

I Poured that mixture over the crust into a spring form pan and Baked at 375 degrees for one hour.

After it was done baking I propped the oven door open with a oven mitt  so it cools down slowly.
There are more than one way to skin a cat.. and more than one way to bake a cheesecake…  My Great grandmother and grandmother all did it this way.. Therefore; I do it this way..

We Also Had a pizza party, The Birthday girl wanted a cauliflower pizza.. Which she created on her own. And the night before I made Pizza dough with the old family recipe :).
and we had a great time.. with the Ranch Family..
