Cinnamon Raisin Scones
This is a simple tasty Scottish/Irish breakfast or sweet treat.
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup butter or crisco
- 2/3 cup milk
- 1/3 cup raisins
Icing:
- 1 cup confectioners’ sugar
- 1 1/2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 425°.
- In a large bowl, combine flour, baking powder, sugar, cinnamon and salt.
- Cut in butter with a fork until the mixture resembles coarse crumbs.
- Add milk and raisins; stir only until combined.
- Place the dough onto a floured surface.
- Make it into a large circle about an inch thick.
- Cut the circle into triangular quarters and place on a baking sheet.
- Bake for 12-15 minutes or until golden brown.
- While the scones are cooling, combine the icing ingredients until smooth. Drizzle over warm scones.
I have been reading a book series on a magical cove in Ireland. And that brought up memories of when I was in Scotland and Ireland. And in the book the lady mentioned ‘warm scones out of the oven’. That got me to thinking……… I loved scones. The blueberry ones are awesome.. But, I absolutely love cinnamon raisin sweets. So I decided on making these. But, never fear, there will be a blueberry scone recipe in the near future. Because I sent my poor husband to the grocery store to get me out of season blueberries!
