Cinnamon Raisin Scones

This is a simple tasty Scottish/Irish breakfast or sweet treat.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup butter or crisco
  • 2/3 cup milk
  • 1/3 cup raisins
Icing:
  • 1 cup confectioners’ sugar
  • 1 1/2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 425°.
  2. In a large bowl, combine flour, baking powder, sugar, cinnamon and salt.
  3. Cut in butter with a fork until the mixture resembles coarse crumbs.
  4. Add milk and raisins; stir only until combined.
  5. Place the dough onto a floured surface.
  6. Make it into a large circle about an inch thick.
  7. Cut the circle into triangular quarters and place on a baking sheet.
  8. Bake for 12-15 minutes or until golden brown.
  9. While the scones are cooling, combine the icing ingredients until smooth. Drizzle over warm scones.
