These were a complete experiment and they were amazing! I started off by using a recipe from another muffin that I make, and it didn’t come out to the right texture. So, I added a few extra things and these turned out absolutely amazing!

Best Ever Kiwi Muffins

These were a bit crunchy on the outside but super soft like a muffin should be on the inside. These were just great!

Servings: 12 muffins

Ingredients
  

  • 2 cups self-rising flour
  • 1/2 cup brown sugar
  • 1/2 cup coconut flakes
  • 1 tbsp lime zest save the lime for later to make an optional glaze
  • 1/3 cup olive oil
  • 1 egg
  • 4 kiwis 3 peeled and sliced thinly and one diced
  • 1/4 cup almond milk

Method
 

  1. Preheat your oven to 390F.
  2. Line a muffin tin with muffin liners, set aside.
  3. Combine the flour, sugar, coconut and zest in a large bowl, set aside.
  4. In the mixing bowl of a stand-up mixer, add the eggs and olive oil and mix until combined and mix in the diced kiwi.
  5. Add the dry ingredients into the wet ingredients and mix until the mixture is crumbly.
  6. Add almond milk and mix until smooth. If the batter is still dry, add a little more almond milk until it is a thick wet batter.
  7. Spoon the mixture into the prepared muffin tin and bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Carefully remove the muffins from the tin.
  9. Once, they are cool, sprinkle with powdered sugar or, make a lime glaze.

Notes

Optional Lime glaze:
Ingredients:
  • 2 cups powdered sugar
  • 2 teaspoons lime zest (optional)
  • 2-2 ½ tablespoons fresh lemon juice
Whisk together powdered sugar, lemon zest, and lime juice in a bowl until blended and smooth. For a thinner glaze, stir in an additional 1 Tbsp. fresh lime juice, 1 tsp. at a time.
