Orange Plumcake

The name of this cake does not do it justice. This is a wonderful moist cake with a wave of orange flavor!

Ingredients
  

For the Cake:
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 tablespoons orange zest
  • 1/2 cup orange juice
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
For the Orange Glaze:
  • 1 3/4 cups confectioners sugar
  • 1/4 cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon butter melted

Method
 

Make the Cake:
  1. Preheat your oven to 350 °F.
  2. Line a loaf pan with parchment paper and set aside.
  3. In the mixing bowl of a standup mixer, beat together the butter and sugar until creamy and smooth.
  4. Add in the eggs, one at at a time, and mixing well after each egg, mix until fully combined.
  5. Mix in the orange zest and juice.
  6. In a separate bowl, mix together the flour, baking powder and salt.
  7. Add into the wet mixture and stir until well combined.
  8. Pour into the previously prepared loaf pan, smooth out the top.
  9. Bake for 55-60 minutes or until a toothpick inserted into the middle comes out clean.
  10. Remove from the oven and let cool for about 10 minutes. Then carefully lift the cake out by the parchment paper and allow to cook completely.
Make the Orange Glaze:
  1. In a mixing bowl, combine the sugar, orange juice and orange zest and whisk until there are no lumps.
  2. Add in the melted butter and whisk until smooth.
  3. Pour it over your completely cooled cake.

Notes

You could use Homemade Orange Marmalade as a topping if you do not wish to use the sugary orange glaze.
