Orange Plumcake

The name of this cake does not do it justice. This is a wonderful moist cake with a wave of orange flavor!

Ingredients
  

For the Cake:

  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 tablespoons orange zest
  • 1/2 cup orange juice
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

For the Orange Glaze:

  • 1 3/4 cups confectioners sugar
  • 1/4 cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon butter melted

Instructions
 

Make the Cake:

  • Preheat your oven to 350 °F.
  • Line a loaf pan with parchment paper and set aside.
  • In the mixing bowl of a standup mixer, beat together the butter and sugar until creamy and smooth.
  • Add in the eggs, one at at a time, and mixing well after each egg, mix until fully combined.
  • Mix in the orange zest and juice.
  • In a separate bowl, mix together the flour, baking powder and salt.
  • Add into the wet mixture and stir until well combined.
  • Pour into the previously prepared loaf pan, smooth out the top.
  • Bake for 55-60 minutes or until a toothpick inserted into the middle comes out clean.
  • Remove from the oven and let cool for about 10 minutes. Then carefully lift the cake out by the parchment paper and allow to cook completely.

Make the Orange Glaze:

  • In a mixing bowl, combine the sugar, orange juice and orange zest and whisk until there are no lumps.
  • Add in the melted butter and whisk until smooth.
  • Pour it over your completely cooled cake.

Notes

You could use Homemade Orange Marmalade as a topping if you do not wish to use the sugary orange glaze.
