Orange Plumcake
The name of this cake does not do it justice. This is a wonderful moist cake with a wave of orange flavor!
Ingredients
For the Cake:
- 1/2 cup butter
- 1 cup granulated sugar
- 2 large eggs
- 3 tablespoons orange zest
- 1/2 cup orange juice
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
For the Orange Glaze:
- 1 3/4 cups confectioners sugar
- 1/4 cup orange juice
- 1 tablespoon orange zest
- 1 teaspoon butter melted
Instructions
Make the Cake:
- Preheat your oven to 350 °F.
- Line a loaf pan with parchment paper and set aside.
- In the mixing bowl of a standup mixer, beat together the butter and sugar until creamy and smooth.
- Add in the eggs, one at at a time, and mixing well after each egg, mix until fully combined.
- Mix in the orange zest and juice.
- In a separate bowl, mix together the flour, baking powder and salt.
- Add into the wet mixture and stir until well combined.
- Pour into the previously prepared loaf pan, smooth out the top.
- Bake for 55-60 minutes or until a toothpick inserted into the middle comes out clean.
- Remove from the oven and let cool for about 10 minutes. Then carefully lift the cake out by the parchment paper and allow to cook completely.
Make the Orange Glaze:
- In a mixing bowl, combine the sugar, orange juice and orange zest and whisk until there are no lumps.
- Add in the melted butter and whisk until smooth.
- Pour it over your completely cooled cake.
Notes
You could use Homemade Orange Marmalade as a topping if you do not wish to use the sugary orange glaze.
