We had a whole case of oranges to use up, so…. I went on the look out for something Sicilian-ish and a cake. This recipe I translated from Giallo Zafferano. The Original is here.
Pan D’Arancia
Orange loaf or orange loaf, an original recipe for a cake with whole Sicilian blended whole oranges that is prepared in 5 minutes in a blender or food processor! A fragrant orange cake that is very quick to make. The orange cake looks like a tall and soft orange cake, with an intense orange flavor, without butter and a little oil.
To make this cake, the whole orange is used and blended together with the ingredients, then both the orange peel and the pulp and juice. Put the chunky fruit in the blender and that’s it. Incredible, isn’t it? A real trick!
Ingredients
- 1-2 Oranges
- 2 cups flour
- 2 cups Sugar
- 1/3 cup Milk
- 1/3 cup Olive oil
- 3 eggs
- 3 1/4 teaspoons baking soda
Instructions
- Preheat your oven to 350 ° F
- Wash the oranges well under water, dry them off and cut them into slices and then into chunks. remove seeds and any bruised pieces.
- Put the chopped oranges in the blender or food processor with the blades.
- Process well, and then add the oil and milk and blend again.
- Add the flour, sugar, baking powder and eggs and blend everything again for a few minutes.
- Brush the 9.5″ (24 cm) cake pan with a little oil and flour. Also add the strips of wet and squeezed parchment paper along the edge of the pan. Or you can use an oiled springform pan.
- Bake in for 50 minutes. Do the toothpick test and adjust with the cooking times of your oven.
- Once the orange cake is ready, remove it from the oven and let it cool.
- You can decorate it with icing sugar and orange slices or prepare a hot orange glaze, using the orange marmalade heated on a low flame..
A great topping for this would the Homemade Marmalade!
