Pumpkin Fritters

Pumpkin is one of my favorites, and the days of fall are getting cooler and cooler. After a long cool week, Pumpkin Fritters are a great way to end the week with a tasty treat!

Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin spice link below
  • 1/4 cup brown sugar
  • 2 large eggs
  • 2 tablespoons butter melted
  • 2 teaspoons vanilla extract
  • 3/4 cup buttermilk
  • 3/4 cup pumpkin puree link below
  • 1 cup oil for frying

Instructions
 

  • In a large mixing bowl add flour, pumpkin spice, baking powder, salt and brown sugar, whisk together.
  • Add the eggs, butter, buttermilk, vanilla, and pumpkin and mix well.
  • Heat your oil in a skillet over medium-high heat.
  • Scoop the batter into the oil. you can use a ice cream scoop or a spoon, depending on how big you would like your fritters.
  • Fry until golden brown on one side, then turn and cook the other side.
  • Remove the fritter and drain on paper towels.
  • Sprinkle with powdered sugar while still warm.
  • Enjoy warm, they don’t last long!
