Pumpkin Fritters

Pumpkin is one of my favorites, and the days of fall are getting cooler and cooler. After a long cool week, Pumpkin Fritters are a great way to end the week with a tasty treat!

Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin spice link below
  • 1/4 cup brown sugar
  • 2 large eggs
  • 2 tablespoons butter melted
  • 2 teaspoons vanilla extract
  • 3/4 cup buttermilk
  • 3/4 cup pumpkin puree link below
  • 1 cup oil for frying

Method
 

  1. In a large mixing bowl add flour, pumpkin spice, baking powder, salt and brown sugar, whisk together.
  2. Add the eggs, butter, buttermilk, vanilla, and pumpkin and mix well.
  3. Heat your oil in a skillet over medium-high heat.
  4. Scoop the batter into the oil. you can use a ice cream scoop or a spoon, depending on how big you would like your fritters.
  5. Fry until golden brown on one side, then turn and cook the other side.
  6. Remove the fritter and drain on paper towels.
  7. Sprinkle with powdered sugar while still warm.
  8. Enjoy warm, they don’t last long!
