Pumpkin Fritters
Pumpkin is one of my favorites, and the days of fall are getting cooler and cooler. After a long cool week, Pumpkin Fritters are a great way to end the week with a tasty treat!
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon pumpkin spice link below
- 1/4 cup brown sugar
- 2 large eggs
- 2 tablespoons butter melted
- 2 teaspoons vanilla extract
- 3/4 cup buttermilk
- 3/4 cup pumpkin puree link below
- 1 cup oil for frying
Instructions
- In a large mixing bowl add flour, pumpkin spice, baking powder, salt and brown sugar, whisk together.
- Add the eggs, butter, buttermilk, vanilla, and pumpkin and mix well.
- Heat your oil in a skillet over medium-high heat.
- Scoop the batter into the oil. you can use a ice cream scoop or a spoon, depending on how big you would like your fritters.
- Fry until golden brown on one side, then turn and cook the other side.
- Remove the fritter and drain on paper towels.
- Sprinkle with powdered sugar while still warm.
- Enjoy warm, they don’t last long!
