This is absolutely the best Halloween Party Desert I have ever made.
Halloween Party: Panna Cotta Brain
Equipment
- A brain shaped mold
Ingredients
For the Panna Cotta Brain:
- 3 12 oz cans evaporated milk divided
- 4 1/4 oz packages unflavored powdered gelatin
- 1 1/2 cups whipping cream
- 1 cups sugar
- 2 tablespoons vanilla extract
- 1/2 teaspoon salt
- 2 oz Amaretto
- 1 little bit black food coloring paste
For The Blood Glaze:
- 8 oz cranberry juice
- 2 tablespoons cornstarch
Instructions
Instructions for Brain:
- In a medium heat-safe mixing bowl add one can of evaporated milk and stir in 4 envelopes of gelatin, set aside.
- Mix well and let this mixture stand for 5 minutes.
- In a sauce pan, pour in 2 cans of evaporated milk and whipping cream, bring to a boil slowly.
- Once it has started to boil add sugar, salt, and amaretto and stir until everything is dissolved.
- Place a fine mesh strainer over the bowl with the gelatin-evaporated milk mixture.
- Remove the saucepan from heat and carefully pour boiling milk mixture into the gelatin-evaporated milk mixture.
- Stir in vanilla extract.
- Add a little tiny touch of black food coloring for a "greyish" hue. This is so it looks more like "Grey Matter"
- Pour the grey matter mixture into your brain mold and refrigerate overnight.
- Top with the Blood Glaze just before serving.
Instructions for Blood Glaze:
- In a small saucepan over medium heat, add cranberry juice and cornstarch. Mix well.
- Bring to a boil slowly, stirring until it has thickened.
- Remove the blood sauce from heat and cool to room temperature.
- Stir well with a wire whisk.
Plating your brain and covering it with blood:
- Flip your brain mold, with the set panna cotta, over onto a serving dish.
- Spoon the blood cranberry juice mixture over the brain, and around the sides.
I am making this again this year for halloween. But two years ago I made this for the first time and it was so realistic that no one wanted to eat it!
I ate it, and it was really good! This was also my last Halloween in America.
