We have an over abundance of prunes to try to eat and make into all kinds of jellies, jams and most of all my favorite cakes!
Fresh Prune Cake
This is a wonderful cake that uses fresh prunes!
Ingredients
- 500 grams Prunes halved, de-pitted and sliced thin
- 200 grams all-purpose flour
- 130 grams butter softened
- 130 grams sugar
- 50 grams milk
- 1 teaspoon vanilla extract homemade recipe below
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- lemon the zest of one lemon
Instructions
- Using a springform pan, line the bottom with parchment paper.
- Pre-heat your oven to 350 F.
- In a large mixing bowl, add all the dry ingredients: flour, sugar, cinnamon and baking powder. Mix to incorporate.
- In the mixing bowl of a standup mixer, cream together the butter and sugar on medium.
- Add the eggs, milk and vanilla, continue to mix on medium until everything is incorporated well.
- Add the dry ingredients to the mixer, a little at a time, and mix well.
- Poor the batter into the prepared springform pan and smooth out with a rubber spatula.
- Arrange the fresh sliced prunes close together on top of the cake, in a circular design or in straight lines. Really just use your imagination.
- Place in the preheated oven for 40-50 minutes, or until a toothpick comes out clean.
- Allow to cool before removing from springform pan.
Notes
Optional: You can dust with powdered sugar after the cake has cooled completely.
