We have an over abundance of prunes to try to eat and make into all kinds of jellies, jams and most of all my favorite cakes!

Fresh Prune Cake

This is a wonderful cake that uses fresh prunes!

Ingredients
  

  • 500 grams Prunes halved, de-pitted and sliced thin
  • 200 grams all-purpose flour
  • 130 grams butter softened
  • 130 grams sugar
  • 50 grams milk
  • 1 teaspoon vanilla extract homemade recipe below
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • lemon the zest of one lemon

Instructions
 

  • Using a springform pan, line the bottom with parchment paper.
  • Pre-heat your oven to 350 F.
  • In a large mixing bowl, add all the dry ingredients: flour, sugar, cinnamon and baking powder. Mix to incorporate.
  • In the mixing bowl of a standup mixer, cream together the butter and sugar on medium.
  • Add the eggs, milk and vanilla, continue to mix on medium until everything is incorporated well.
  • Add the dry ingredients to the mixer, a little at a time, and mix well.
  • Poor the batter into the prepared springform pan and smooth out with a rubber spatula.
  • Arrange the fresh sliced prunes close together on top of the cake, in a circular design or in straight lines. Really just use your imagination.
  • Place in the preheated oven for 40-50 minutes, or until a toothpick comes out clean.
  • Allow to cool before removing from springform pan.

Notes

Optional:  You can dust with powdered sugar after the cake has cooled completely.
